In
a further study75 on the decomposition of alliin
in aqueous solution (variable pH) other compounds in addition
to 2-formylthiophene, 2-acetylthiazole and ethyl acetate
were discovered. Apart from ethyl acetate, allyl alcohol
and acetaldehyde the majority of the compounds identified
were sulphur-containing. This work goes on to propose a
mechanism for the initial transformation of alliin to allyl
alcohol and cysteine (Fig. 15) and further decomposition
of cysteine to explain the formation of other sulphur compounds
(Figs. 16-18). |
